Our pâté is born in the Apulian countryside, where we harvest the tomatoes while they are still unripe. After careful selection, they are washed and sliced, then left to mature under salt according to Salento tradition, naturally enhancing their lively, tangy flavour.
The recipe is completed with Racale capers, aubergines and onion, slowly ground to obtain a creamy texture rich in Mediterranean aromas.
