The processing of our Salento capers follows an ancient method handed down by our grandfather: we hand-pick only the smallest, most tender capers, remove the stems, and leave them under salt to naturally eliminate bitterness. After a careful rinse, they are jarred in apple cider vinegar, chosen for its delicacy and ability to preserve the original flavor of the caper.
