Durum wheat Senatore Cappelli foglie d’ulivo pasta are an artisan Apulian pasta made through a short supply chain, produced exclusively with wheat grown on our own farm. From field to table, we oversee every stage of production to guarantee quality, traceability, and authenticity.

The elegant olive leaf shape recalls the centuries-old olive trees of Apulia, a symbol of our land and the rural tradition of Southern Italy.

We use only Senatore Cappelli durum wheat cultivated directly in our fields, then transformed into stone-milled semolina at low temperature to preserve the wheat germ and its natural nutritional properties. The result is a less refined, more digestible pasta with an intense flavor.

The production process is strictly artisan: the Olive Leaves are hand-shaped and slowly dried, resulting in a rough, porous surface that perfectly holds any sauce.
